Spring is Here, Time for Vegan Spring Recipes | ZardyPlants

Published about 2 months ago • 2 min read

Hey, Reader.

The first day of spring was the 19th where we are (sorry Australia) and that hopefully means lots of warmer, sunny days soon. Unfortunately for us, as we are writing this, it's snowing outside. This is pretty much par for the course in the midwest. Without mountains to our north, cold air sporadically blasts down from Canada. This means we can go from having weather in the the 70's (21 c) to the low 30's (-1 c) in just a few days.

Despite this, we're going to celebrate spring for people who live in more stable climates. There's lots of recipes that are really good this time of year, especially ones that use spring produce like our Vegan Asparagus Risotto and Vegan Goat Cheese Salad with strawberries (and yummy Strawberry Tahini Dressing)!

Vegan Springtime Recipes

Vegan Hollandaise Sauce

This easy Vegan Hollandaise Sauce is super creamy, tastes like its eggy non-vegan counterpart, and comes together in 5 minutes or less! This one is egg-free, soy-free, nut-free, oil-free, and gluten-free! Enjoy it on a variety of dishes such as tofu, vegetables, potatoes, and more.

Vegan Olive Oil Cake

Fluffy, rich and somehow still light, this Vegan Olive Oil Cake is absolutely delicious and easy to make. Serve this cake with a cup of coffee or tea or a glass of oat milk and enjoy a cake with a tender crumb, subtle olive oil flavor, and a hint of lemon.

Vegan Focaccia

Simple and completely delicious Vegan Focaccia is chewy yet soft with a super crispy exterior and immense flavor. You don’t need to be a pro baker to make this tasty yeasted bread. This dough rests overnight in the fridge for more flavor and hands-off time.

Vegan Italian Salad

Colorful and crisp, this Vegan Italian Salad is delicious and filling enough for a meal or makes the perfect side. The classic Italian flavors and zesty, creamy dressing will leave you wanting more, and luckily this salad is easy and simple enough to make all the time!

Vegan Salmon

Delicious and filling, this Vegan Salmon is easy to make in two different ways: bake it for an easy, hands-off meal or pan sear it and enjoy a crispy “skin” on top with a moist and flaky interior that will impress everyone.

Vegan Lemon Tahini Broccolini Pasta

This fancy Vegan Lemon Tahini Broccolini Pasta is creamy, tangy, and slightly cheesy. This dish has a rich, delectable, downright addictive flavor that makes this recipe a hit, especially with the fresh, crisp broccolini / baby broccoli.

1-Bowl Vegan Gluten-Free Carrot Cake

Fluffy yet moist and delicious, this 1-Bowl Vegan Gluten-Free Carrot Cake is a DELICIOUS dessert that's perfect for spring, Easter, or any time of the year! This amazing, HEALTHY cake is free of refined sugars and flour, and is a showstopper at any gathering. Make it for any occasion since it only takes 45 minutes from start to finish.

That's all for now. Hope things are getting warmer and greener where you are!

I've come to a sad realization, Reader. Fall has pretty much ended this year (at least here in Illinois, where it's been colder and we've even had snow recently). Don't get me wrong, I know fall technically ends on December 21st but that's what the calendar says. Only a handful of trees still have leaves, I'm wearing my winter coat and gloves for the dog walk, and the wind isn't a cool breeze but a reminder of what's to come. So long, sweater weather. This also means that fall recipes are...

A spoon lifting mushroom soup out of a pot

It's chilly outside Reader! Fall is not just in full swing in our part of the world, it's already started to end. The trees are almost bare, the fields are almost empty, and we've had a couple of days below freezing. Some not-so sun-filled days are ahead of us, I'm afraid. One silver lining to these more-than-brisk days is that soup season is back. Soup is so warm and cozy and it really can fill you up. And on top of all that, most soups are souper easy to make. At ZardyPlants, we have tons...
