Delicious Vegan Fall Recipes to Keep Cozy

Published 7 months ago • 2 min read

Hey Reader,

Fall is my favorite season. It's not just the food (ok, a lot of it is the food), it's the colorful leaves, the cooler weather, being able to snuggle by the fireplace in a big hoodie with a hot mug of tea, and snuggles from my dog and Mr. ZardyPlants. Back to the food... I love soups, and apple things, and pumpkin things, and ooph, fall baking is really fun too. That's a sample of the vegan fall recipes you'll find below. So whether you're warming up with a big bowl of soup or with a cup of coffee and a slice of apple cake, I wish you the coziest of autumns.

Oh, and if you're looking for vegan Thanksgiving recipes, no worries, those are coming really soon. But you can always peruse my collection of vegan holiday recipes if you're getting an early start on your holiday planning! (My sincere apologies to my Canadian readers who have already had their Thanksgiving. I hope you had a lovely holiday.)

Vegan Fall Recipes

Vegan Pumpkin Risotto

This creamy and cozy one-pot Vegan Pumpkin Risotto is the ultimate comfort meal, but still healthy and family friendly. This 20 minute dish is sure to be a favorite entree, but also makes a fabulous side. Bonus points: it’s great for a holiday meal or just a quick weeknight favorite.

Vegan Apple Pie Chia Pudding featuring Caramelized Apples

Packed with fall flavor, this Apple Pie Chia Pudding is a delicious and easy healthy breakfast or dessert. This delicious meal-prep friendly meal will keep you satisfied and energized for hours. It's topped with these incredibly easy but amazing and versatile Caramelized Apples that I've been putting on everything lately.

Butternut Squash Carrot Ginger Soup (Instant Pot or Stovetop)

This rich and creamy Vegan Butternut Squash Carrot Ginger Soup is so cozy and delicious. Packed with nutrients, this soup is easy to throw together in your pressure cooker or stove top (instructions provided) and perfect for weeknight or a holiday spread. Top with roasted squash seeds or homemade vegan croutons.

Vegan Apple Cake

This moist and delicious Vegan Apple Cake tastes like fall and is just as easy to make as box cake mix. Healthy and great warm or cold, this cake is sweet, soft, and a tiny bit crunchy when you get a little pop of baked apple!

Vegan Pumpkin Mac and Cheese

Creamy, cheesy, cozy Vegan Pumpkin Mac and Cheese is the perfect quick and easy vegan dinner option (especially for fall and winter!). It’s absolutely delicious and it is actually healthy, but no one will notice because it’s so good!

Vegan Gnocchi Soup

This creamy Vegan Gnocchi Soup is so cozy and easy to make in under 25 minutes. It tastes just like the Olive Garden classic but with chickpeas instead of chicken without sacrificing any flavor.

Pumpkin Pie Vegan Custard

Smooth, creamy, and sweet, this low-fat Pumpkin Pie Vegan Custard is a ridiculously easy alternative to pumpkin pie. Make it in under 10 minutes and chill it an easy option for Thanksgiving or just a quick dessert or snack!

Vegan Focaccia

Simple and completely delicious Vegan Focaccia is chewy yet soft with a super crispy exterior and immense flavor. You don’t need to be a pro baker to make this tasty yeasted bread. This dough rests overnight in the fridge for more flavor and hands-off time. Great with vegan garlic butter or vegan meat sauce and pasta.

That's all for now. Hope you have a beautiful season.

Hey, Reader. The first day of spring was the 19th where we are (sorry Australia) and that hopefully means lots of warmer, sunny days soon. Without mountains to our north, cold air sporadically blasts down from Canada. This means we can go from having weather in the the 70's (21 c) to the low 30's (-1 c) in just a few days. Despite this, we're going to celebrate spring for...

I've come to a sad realization, Reader. Fall has pretty much ended this year (at least here in Illinois, where it's been colder and we've even had snow recently). Don't get me wrong, I know fall technically ends on December 21st but that's what the calendar says. Only a handful of trees still have leaves, I'm wearing my winter coat and gloves for the dog walk, and the wind isn't a cool breeze but a reminder of what's to come. So long, sweater weather. This also means that fall recipes are...
